All our food was once invented. Every day we eat ingredients that were built by our ancestors. Do these ingredients still work in a future-proof world, or should we rethink our food?
Should we fly soybeans all over the world if the same vegetable proteins fall from an oak tree every autumn? Could we avoid deforestation by making chocolate from a mushroom? Instead of killing processionary caterpillars, can we eat a self-created pest?
