What flavours are hidden underwater?
There are thousands of underwater flavours. Yet, we only work with a few strains that are easy to grow. There is little research on the different flavors in the underexposed varieties.
I come from a family of seaweed farmers from Brittany and in my research underwater, I came across many flavours such as tropical fruits and peppery truffle under the rocks in spring. I have been categorizing these flavors in the 'Algae flavor guide', with a flavour wheel in which I show the diversity of underwater flavors.
With this guide, I want to provide guidance to entrepreneurs, designers, researchers or chefs, so that much more can be experimented and developed. There is still a lot that can be done with and in the ocean, such as nurturing diversity instead of making the same mistake as on land.
