All year round I forage, looking for flavours and hidden stories. ‘Bodem diner’ is a taste adventure on Dutch soils.
From the forests on the Utrecht ridge to the clay banks of a variety of Dutch rivers, and from peat meadow areas, to Zeeland’s salty sea. In 18 dishes we took people on a journey through taste findings and wonders.
‘Bodem diner’ tackles questions with edible solutions. How do you prepare the fly agaric? What does acorn pate and sugar-weed caramel taste like? What is the taste of our deciduous forests and which species grow in our ditches?
‘Bodem diner’ is repeated again when the pantry is filled with fermented experiments and new discoveries are made.
