PROJECT | PEOPLE | YEAR |
We are destroying our biodiversity and rapidly changing our climate. Plagues that result from this, such as the dreaded oak processionary caterpillar, are our own fault. With this sauce we question the role of humans in the disrupted food climate.
We know the oak processionary caterpillar as our great enemy. Irritated eyes, burning lungs and above all, fear of death. Millions are thrown over the fence to fight the plague, but shouldn't we turn this symptom control into behavioral change? Would it be possible to eat these self-created pests?
Procession Garum is a fermented sauce from the oak processionary caterpillar. A sauce made of danger as a solution. This solution is about how we as humans relate to the planet. Is the direction we are going the right way? we don't think so, it's time to change our habits.
Caterpillars are full of protein and can perfectly serve as an umami flavor enhancer in the kitchen. Fermenting the caterpillar creates a tasty, deep, powerful sauce 'Garum'. Also called fish sauce. Need tips on how to best use this sauce? Don't hesitate to send us a message for all your daily recipes.
This sauce is the start of my big new project, sept 2021 I get on my bike to question products from our current food system and look for logical solutions and changemaking stories.
Do you want the procession garum to be sold in your store next door?
